This is one classic cocktail that was made for the Australian summer - and perfectly refreshing for any Christmas function!

  • 1/4 cucumber, sliced
  • 1 lemon, cut into wedges
  • 6 strawberries, halved
  • 1 handful blueberries
  • a few sprigs mint
  • 500 ml Pimm’s No.1 Cup, chilled
  • 1 1/2 litres ginger beer, chilled

Method

1. Put the cucumber, lemon, strawberries, blueberries and mint in a large jug.

2. Add the Pimm’s and ginger beer, stir well and serve immediately.
